Low Country Boil


Low Country Boil
in foil
(Feeds Four)

I made this for Sunday dinner and it was fast, easy, and delicious!


Red Potatoes cut into 1 inch pieces skin on.
1 package Kielbasa cut into 1 inch pieces
1 bag cooked shrimp.
2 ears white corn cut in 1 ½ inch pieces
1 tsp chopped garlic
3 tsp Old Bay Seafood seasoning
1 tsp Kosher salt
1 tsp ground black pepper
¼ cup melted butter
Zest from 1 Lemon
Juice from 1 Lemon

Boil Potatoes and cut corn together until done. Combine in a large bowl; Kielbasa, shrimp, garlic, salt, pepper, butter, lemon zest and lemon juice, potatoes and corn. Mix all together and pour into a foil lined cookie sheet. Seal up boil ingredients in tin foil and Bake 400 degrees for 30-45 minutes until good and hot.

My husband ate his weight in this!
